Fudgy Zucchini Zoom-Bars
Health and heaven combined, with a slightly bittersweet flavor, and what a great way to get some vegetables into a snack. No chocolate-lover will know that zucchini is the secret ingredient.
2 cups flour
1 ¼ cups sugar
1 ½ teaspoons baking soda
1 teaspoon salt
1/3 cup cocoa powder
2 cups finely grated zucchini
¼ cup vegetable oil
2 teaspoons vanilla
Preheat oven to 350 degrees. Baking time 25 minutes.
In a medium-sized bowl, using a spoon or whisk, combine the flour, sugar, baking soda, salt and cocoa. Set aside. In a large bowl, stir together the zucchini, oil and vanilla. Add the dry ingredients to the zucchini mixture and stir together until well mixed and glossy.
Grease or oil, then a 9”x13” pan and dust it with flour. Pour in batter. Bake at 350 degrees for 25 minutes.
Hint: I try to keep some zucchini grated and divided in 2-cup plastic bags in my freezer to thaw out for quick treats like these. When thawed, drain off about 1/4 cup of the water.
