Last night I tried a little variation on a great comfort-food recipe from Ellie Krieger, the host of Food Network’s Healthy Appetite show. Her recipe for Tuscan Roasted Chicken and Vegetables, in yesterday’s USA Weekend magazine, sounded both delish and braces-friendly, so I gave it a try. My veggies took a little longer to roast, but that made the chicken super tender. Results: excellent.
It’s basically* strips of zucchini and quartered Roma tomatoes, with a little olive oil, lemon juice, lemon zest and salt, roasted first by themselves (for 30 minutes) then with chicken that’s been rubbed with olive oil, chopped garlic and rosemary. Bake everything at 375 degrees until tender.
